Goin' Bananas for Banana Cupcakes



Banana Cupcakes

Ingredients
3 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine
1 1/2 cups refined sugar
4 pieces large eggs
1 cup mashed bananas
1/2 teaspoon vanilla extract
1/2 cup milk
1 teaspoon lemon juice
1/2 cup chopped nuts

Instructions
1. Preheat oven to 350F. Line two muffin tins  with paper cups.
2. Sift together flour, baking soda and salt. Set aside.
3. Combine bananas, milk, lemon juice and vanilla extract. Set aside.
4. Cream butter and sugar until light and fluffy, about 7 minutes.
5. Add eggs one at a time beating well after each addition.
6. At low mixer speed, add flour mixture a little at a time alternately with milk-banana mixture.
7. Fold in half of nuts.
8. Transfer to muffin cups and top with remaining nuts.
9. Bake at 350°F for about 20 minutes or until toothpick inserted in center comes out clean..
10. Cool on wire racks.
