Banana Chocolate Chip Sourdough Bread Pudding



     On the off chance that I do have a loaf of sourdough bread about to go stale, I would try to make banana chocolate chip sourdough bread pudding. But it almost always never happens that I have all the ingredients needed to make a pudding too. So it was a happy coincidence that I got to make this for the family's late-night attack of the munchies one evening. The taste was downright comforting especially when paired with really good Selecta vanilla ice cream. 

     Everybody agreed that it was so good I sometimes think maybe I should dedicate a sourdough bake day just for making banana chocolate chip bread pudding.


Banana Chocolate Chip Sourdough Bread Pudding

Ingredients
4 cups sourdough bread pieces
4 large eggs
1 cup refined sugar
2 cups whole milk
1/2 teaspoon salt
2 teaspoons vanilla extract
2 bananas, mashed
1 cup dark chocolate chips

Instructions
1. Preheat oven to 350°F. Grease two muffin pans. Set aside.
2. In a large bowl, mix together the eggs, sugar, milk, salt, vanilla and bananas.
3. Stir in bread pieces and 3/4 cup chocolate chips.
4. Let bread soak in the liquid for about 5 minutes.
5. Divide mixture into 2 greased muffin pans. Top with remaining chocolate chips.
6. Bake at 350°F for 40 minutes or until cake tester inserted in center comes out clean.
7. Serve warm with a scoop of vanilla ice cream.

Makes 18 muffin-sized bread pudding.
