Microwave Double Chocolate Mug Cake



When you want dessert fast and a dessert run is not possible, this Microwave Double Chocolate Mug Cake just might save the day. It is fairly easy to prepare and needs only a microwave oven to get the job done. It is also a fun and quick way to make dessert with the kids. They get to choose what surprise center to put in each cup and enjoy their own creation a few minutes after.






Ingredients
1/3 cup all-purpose flour, sifted
1/4 Dutch-processed unsweetened cocoa powder
1/2 cup refined sugar
1/8 teaspoon salt
1 teaspoon instant coffee granules
1 medium egg, lightly beaten
1/3 cup vegetable oil
1/4 cup fresh milk
4 squares chocolate bar (or 4 tablespoons Nutella)
dusting of confectioner's powdered sugar

Instructions
1. In a bowl, sift together flour, cocoa powder, sugar and salt.  Add the coffee, egg, vegetable oil and milk to the dry ingredients. Whisk until smooth.
2. Divide batter between 2 mugs or 4 tea cups (Make sure the mugs you use are microwave-safe!)
3. Just before baking, drop a square of chocolate in each mug. Lightly push down with a teaspoon.
4. Microwave on High for 2 to 2.5 minutes.
5. Cool 5 minutes. (They are way too hot served immediately.)
6. Dust tops with powdered sugar before serving.

Note:
This is also yummy when served with a scoop of vanilla ice cream on the side. The hot and cold combination is just superb. A word to the wise, a mug cake is meant to be shared. One serving is huge!
