Cheesy Baked Salmon
Another weekend and another recipe hack for you, ladies and gentlemen! This is a copycat recipe for Conti's Baked Salmon. This cheesy baked salmon has two kinds of cheese, mayonnaise, garlic and lemon juice. It is such a hit at our parties it is the first dish to always run out. I get requests for the recipe all the time so I'm finally sharing it here.
I see other recipes online listing only Parmesan cheese, mayonnaise and garlic as ingredients. Mine is different because like I say time and time again, "Everything tastes better with cream cheese".
For this dish, I make sure there is enough cheesy topping to cover the fish. I myself am happy just to eat the topping. It's that good. But if you are trying to lower the cost or cut down on calories, half the quantity of the topping recipe will do to thinly cover the top of the fillet but not the sides. But for special occasions, I strongly encourage you to indulge.

Cheesy Baked Salmon
Ingredients
1 kilo salmon fillet, deboned
1 cup cream cheese
1 cup grated Parmesan cheese
1/4 cup low-fat mayonnaise
2 tablespoons lemon juice
4 cloves garlic, ground to a paste
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon Spanish paprika

Instructions
1. Remove any fish bones with clean tweezers. Pat fish dry with paper towels.
2. Grease a baking pan with vegetable oil and put fish in the pan. Season with a tiny amount of salt, pepper and 1 teaspoon lemon juice.
3. Mix together cream cheese, Parmesan cheese, mayonnaise, lemon juice, garlic, salt and pepper.
4. Spread topping on top and sides of the salmon fillet. Sprinkle
with Spanish paprika.
5. Cover the pan with aluminum foil. Bake at 350°F for 30 minutes.
6. Remove foil and bake another 10 minutes or until golden brown.
