Cajun Shrimp Pasta


My family loves Tex Mex dishes. That's why we frequent restaurants like T.G.I. Friday's and Chili's to name a few. And often we order their Cajun Chicken Pasta when we visit. Cajun seasoning is usually made from a combination of spices like garlic powder, onion powder, paprika, black pepper, oregano, thyme and cayenne pepper. Recently I found a bottle of Cajun seasoning with no salt added in Healthy Options so I decided to hack our favorite dish at home. But I used shrimps this time and topped it with scallions instead of parsley. Another successful hack I may say so myself. Do try it! 

Cajun Shrimp Pasta

Ingredients 
400 grams linguini or spaghetti
2 tablespoons cooking oil
2 tablespoons butter
1 head garlic, minced
1 large white onions, diced
1 small red bell pepper, diced
2 teaspoons Cajun seasoning (no salt added)
1/2 kilo large shrimps, headless, peeled and deveined with tail intact
1 teaspoon salt
1/4 teaspoon ground black pepper
1 cup heavy cream
4 tablespoons grated Parmesan
1 tablespoon chopped parsley or scallions

Instructions
1. Cook noodles according to package directions. Reserve 2 cups pasta water. Set aside.
2. Heat oil and butter in skillet.
3. Saute garlic and onions until translucent.  Add Cajun seasoning and stir to toast spices.
4. Add diced red bell pepper.
5. Add peeled shrimps and cook until pink.
6. Lower heat and add heavy cream and 1/4 cup pasta water.
7. Season with salt and pepper.
8. Toss noodles in the sauce. Add a little more of the reserved pasta water if the dish is too dry.
9. Top with grated Parmesan and chopped parsley.

Makes 8 to 10 servings.
