Buttery And Crispy Pizzelles
I just remembered ordering a Cucina Pro Pizzelle Baker from Amazon that arrived six years ago. Yup, you read it right. Six years! It's been sitting in our storeroom unused until I wondered in there and remembered. It's a long story why it ended up in there so I won't go into it in detail.
Fast forward to now and I finally made myself try it and made pizelles one fine afternoon in November. Good thing my other brother and his family were also home at the time so we made it into a family activity. I just used the recipe from the brochure that came with the pizzelle maker and it was delicious.
The first 2 waffles were a disaster it was hilarious. Soon enough though we were able to make decent ones. The pizzelles were fairly easy to master. The key is keeping the griddle part well greased. But to make the waffle cookie cups, you have to work fast. So I employed an assembly line tactic. I was manning the pizzelle maker and the kids helping shape the hot waffles in mini bowls before they crisp up. So much fun this way. We gabbed away and laughed so hard while we munched on the broken pieces. Meanwhile the others were busy taking photos of our finished product.
We had ice cream in waffle cups for dessert that same evening. The entire batch was consumed in 24 hours. Well, not a surprise for a household of 20.
Next time I'd probably make some pizzelles with one side dipped in chocolate for a decadent treat. I'll keep you posted.
Recipe adapted from Cucina Pro
Basic Pizzelles
Ingredients
3 large eggs
¾ cup refined sugar
1 teaspoon vanilla extract
½ cup butter, melted and cooled
1¾ cups all-purpose flour
2 teaspoons baking powder
Instructions
Melt butter and set aside. Beat eggs and sugar until light yellow about 2 to 3 minutes. Add melted butter and vanilla extract. Sift together flour and baking powder. Fold into the mixture in two parts until well blended.
Heat pizzelle iron, place 1 tablespoon of batter on the grid just behind the center of the pattern. Bake until golden brown, about 2 minutes. Remove and cool on a rack. Repeat with the remaining batter.
To make waffle cups, remove pizzelles from the grid. Sandwich between two bowls. After 15 seconds transfer to a rack to cool completely.
